Atmospheric Considerations
To preserve our delicate subterranean microclimate and ensure an optimal sensory experience for all guests, please note:
- Vault Temperature: The maturation chambers maintain a steady 12°C (54°F). We provide pure Irish wool throws, but light layering is strongly advised.
- Olfactory Purity: Strong perfumes, scented lotions, and smoking disrupt the nuanced aromas of aging rinds and are strictly discouraged before tasting.
- Acoustic Calm: The limestone vaults have remarkable acoustic clarity; we encourage low conversational tones throughout the session.
- Children & Animals: Due to hygiene controls and active affineur equipment in the maturation corridors, the underground chambers are restricted to guests aged 16 and over. Certified assistance animals are accommodated.
