How to Build a Cheese Board.
Architectural rules for progression, spacing, temperature tempering, and thoughtful knife allocations to transform a board into a sensory journey.
1. The Clockwise Flavour Arc
A triumphant cheese presentation is structured like a musical score. Arrange pieces in a gentle clockwise dial starting at 6 o'clock with the lightest, freshest profile (such as a lactic goat curd), progressing through a bloomy soft-ripened wheel, an aromatic cider-washed rind, a clothbound crystalline cheddar at 2 o'clock, and culminating in a bold, savory blue at 5 o'clock.
2. Dedicated Blades & Surface Temperature
Never provide a single shared knife for multiple cheeses. A pungent blue cheese smeared across a young curd destroys the subtle grassy notes of the latter. Equip each distinct style with its own dedicated blade: a heart-shaped spade for crystalline cheddars, an open-blade cheese knife for soft brie styles, and a wire cutter for crumbly blues.
3. Tempering Is Non-Negotiable
Remove wheels from cool storage 45 to 60 minutes prior to serving. Chilled butterfat masks volatile aromatics; bringing the cheese to 18°C unlocks rich pastures, sweet nuttiness, and silky texture.
